Sourdough has an enticing, tangy, flavor.
Sourdough is a term that refers to both bread and the starter used to make it. The sourdough starter begins with a combination of flour and water.
When flour is mixed with liquid, lactobacilli bacteria, and wild yeast - the flour and your environment start working together. This process generates the by-products that cause bread to rise and its rich flavor.
The signature flavor comes from the friendly bacteria and yeast, which produces flavorful lactic and acetic acid in rising bread dough.

Why Sourdough? My story....
I have struggled with gluten intolerance for quite some time - constantly bloated, joint aches and pains, headaches, acne, fatigue, the list goes on and on. It was all I knew. I never really thought about it - this was my normal. Ten months ago, I found myself in the hospital with a severe diverticulitis flare. A few weeks later I was still miserable and was having random high fevers and feeling absolutely terrible. Turns out, I had developed an allergy to gluten. My body was literally attacking itself.
